Why sourdough tastes sour
Sourdough bread uses no packaged yeast. So where does its sour taste come from?
Instead, the baker keeps a starter: a jar of flour and water colonized by wild yeast and bacteria.
The yeast in the starter produces carbon dioxide, which makes the dough rise.
The bacteria release two acids: lactic acid, mild like yogurt, and acetic acid, sharp like vinegar.
